Cauliflower Fritters


400g Cauliflower

1 cup Self Raising Flour

1 Egg

1/2 cup Parmesan

2 tsp Herbs

1 tsp Garlic


Step 1: Boil cauliflower florrets in a pot for 4-6 minutes until tender. Drain.

Step 2: Roughly chop cooked cauliflower and transfer to a bowl. Set aside to cool slightly.

Step 3: Add garlic, herbs, parmesan and flour to cauliflower. Stir to combine.

Step 4: Pour over egg and stir. Slowly add 1/4 cup water until a thick batter forms.

Step 5: Add enough oil to a non-stick frying pan to cover base. Heat oil. Cook spoonful's of mixture for 4-5 minutes each side until golden.

Step 6: Serve fritters with your choice of chutney, sauce or aioli.
