  • FUSSY KIDS? 8 WAYS TO REDUCE FOOD WASTE (AND SAVE MONEY!)

If you’re a parent then you’ll be no stranger to the fact that kids waste A LOT of food. They go through fussy phases. They say they’re still hungry, then decide they are not, and because their appetites can vary from day to day it can be hard to know exactly how much to provide. According to Love Food Hate Waste, the average Kiwi family throws away three shopping trolleys full of edible food each year, with an average cost of $563. That’s mind-blowing stuff and I’m sure we’d all like an extra $500 in our pocket each year. While it might not seem a big deal, if we all make an effort to reduce our food waste we not only help our wallets, but the environment too. With less food wastage, you reduce your carbon footprint, buy less and use less packaging. Reducing food waste isn’t about forcing your child to eat more or eat what they don’t want to try. There are lots of ways to reduce food wastage alongside helping them embrace a range of foods as they grow. Here’s how. REDUCING BREAD WASTAGE SAVE THE CRUSTS. We probably don’t think too much about wasting bread, but it’s the number one food item we throw away in New Zealand. Crusts tend to be the least favourite part of bread and kids will often leave them on their plate or insist you cut them off. But instead of throwing them away, pop them in a bag in the freezer. Then when you need breadcrumbs, just take them out, whizz them up in the blender and you’ll have instant breadcrumbs. You can use these to make home-made chicken nuggets. RECIPE FOR CHICKEN NUGGETS Simply cut up chicken breast, beat an egg, dip the chicken pieces in egg and then the breadcrumbs. Pan fry until they’re cooked through. They’re always a favourite with the kids! MAKE FRENCH TOAST BREADSTICKS You can also use your crusts or bread scraps to make french toast sticks. Simply beat together 1-2 eggs (depending on how much you want to make), a dash of milk and a sprinkle of cinnamon, dip in your crusts then pan fry until cooked through. RE-USE SANDWICHES You can re-use leftover sandwiches for afternoon tea. Pop them in the toasted sandwich press for a refreshed version. USING LEFTOVER VEGETABLES AND FRUIT & ENCOURAGING YOUR CHILD TO EAT FAMILY MEALS When kids don’t eat vegetables, it’s tempting to just leave them off their plate. But it’s important to serve children the same meals as adults (including 1-2 foods you know that they will eat), even if they won’t eat everything. This way they can become familiar with a range of foods and they see you eating them too which allows them to learn by watching what you do. It provides the opportunity for them to touch, lick and taste them and get used to the sight, smell and taste of a range of foods. BUT THERE’S NO NEED TO WASTE WHAT THEY DON’T EAT. HERE’S SOME WAYS TO USE UP LEFTOVERS · Use the kids leftover vegetables the next day as a part of an omelette for breakfast or lunch. · Leftover cooked vegetables can be chopped up finely and added to mince dishes the next day. Use the mince to make mini pies made with bread cases (always a fave) or mince pasta dishes. · Cucumber and cooked carrot sticks are a great snack but more often than not they just have one bite out of each of them. I reuse the cucumber either for my salads or in smoothies and add the carrots to dinner or again add them to smoothies. · Our fridge sometimes ends up with quite a collection of partly eaten bananas. Some I eat myself but the stuff that ends up sitting in the fridge for a few days gets frozen for baking. Banana bread is my go-to recipe to use them up. · Ice blocks are always a winner with kids and they’re a great way to use up leftover fruit and even vegetables!! Good combinations are carrot + banana and orange; pumpkin, apple and orange, banana, berry and cucumber; minted peas, kiwifruit, banana, yoghurt and avocado; orange, carrot, banana and yoghurt. As long as you’ve got more fruit than vegetables and don’t go for very strongly flavoured veges, they taste just like a fruit ice block. • Making the most of working from home

Working from home has plenty of perks; flexibility of time, no commute, you can cook yourself an awesome lunch, throw on a load of washing in the middle of the day, sweatpants are appropriate attire, and working in a comfortable environment. You are often able to plan out your day to be more productive while mixing work and life. While working from home can be amazing, you do need to set a few things in place to make the most of your time and keep the balance between work life and personal life. Have a set workspace Set up an office somewhere in the house where you can be comfortable that has natural lighting. Ideally, you want an area of the house that has a door. You can close it when you are working so you do not get distracted by the other members of your household, then also closing it at the end of the day is a good way to distinguish switching off from work time. You want to keep your work in one space in the house, otherwise, you may find your whole house becomes your office. This is not only a highly unproductive way to work but also begins to engulf your personal life. Set your work hours It’s easy to get carried away and work a lot longer than you typically would when you’re working from home. Set out exactly what hours you are going to work for the day and stick to that. If your job allows, you don’t necessarily have to set your work hours as 9-5. You may find it more productive and more balanced working in the morning, having a longer break at lunchtime, and then picking up work again in the afternoon and working a bit later. Find what works for you. When working from home, you no longer have the commute time, make the most of it. If you have kids, you might use the time you would normally spend in the car to play before you start work for the day. Or you might use this time to do housework or cook a nice healthy breakfast. If you set aside this time that you would normally spend in the car with a productive task, you will feel accomplished and ready to start your workday. Take a set lunch break Just as you would at work, get up from your desk, leave the room, and have a proper lunch break. It’s so easy to just keep working when you are at home, so set an alarm if you need to and force yourself away from your work for a half-hour. This will actually help you be more productive. You could even go for a short walk or eat lunch outside to get some fresh air. Put your work away at the end of the day Turn off your computer, tidy your desk, and leave the room (work). This gives your mind a clear distinction that work is over for the day and you are now in relaxation mode. You need to find a way to mentally clock out of work, as you no longer have the usual routine of leaving work. Once you have “clocked off” make sure you stick to that, the email can wait till tomorrow. If you say you will just reply to this one email the snowball effect can mean the work-life balance is completely off. If you struggle with this try logging out of your email so you don’t see the notifications or put your phone on flight mode. Having that time away from work is so important for your mental health and overall productivity. Take your days off seriously Just because you have access to your work 24/7 doesn’t mean you should be available all the time. Give yourself your normal weekend where you don’t work and spend the time for you. It's so easy to walk past your office space and think I will just answer a few emails, but it never ends at that. Take your time off completely away from your work and recharge ready for the next work week. Set your new morning routine Creating a pre-work routine is a great way to prepare yourself mentally to start your workday when you work from home. Whether it’s getting up and doing a workout, having a good breakfast, playing with your kids, and having breakfast with them. Decide what works for you and try and stick to this each workday. This helps to create a bit of normality for you and your family.

  • How’s your Nutrition in Lockdown?

I am not a nutritionist – and I don’t pretend to be! Just thought we would check in with you guys and see how your eating is going during lockdown? Like all New Zealanders during lockdown I have got heavily into baking (I even have the 10kg bag of flour at home!) During quieter times, like this lockdown, there tends to be plenty of time to focus on food and enjoy all of our baking - maybe a little too much! If you are feeling a little bloated and not your normal self, here are a few reminders of what you can do to combat the lockdown food feeling. My Tips: Cleanse your system. Keep up your water intake 1-2 litres a day minimum. This may increase the feeling of fullness and also handy…you are never far from the loo! Check-in on your portion sizes, are they the same as what they were? Perhaps reducing slightly will help you feel lighter and less bloated. You are not expelling the incidental calorie output that you would have by walking around a lot more in normal life. Reduce your alcohol intake. It is such a hard one as we are in an unprecedented situation, but maybe limiting your intake for a couple of weeks may help you feel motivated for the following exciting day! Make healthy choices, just keep in mind that fruit, vegetables, and salads are all great choices for lunches and dinners while you have the time to prepare! Take care and stay safe! Kelly x
