Caramel Dark Chocolate Cookies

Combine the following ingredients in a bowl:

1 cup nut butter (I used homemade almond)

1/2 cup coconut or rapadura sugar & 1 egg.

Mix until well combined. Fold in 1/2 cup chopped good quality dark chocolate.

Using damp hands, roll on to small balls and place 2-3 cm apart on a baking tray lined with baking paper. Press down gently with a fork. Bake at 180 C for 6-7 minutes.

Makes 10 cookies. Enjoy!
