Brain Balls

We all enjoy a treat and lately I've become a huge fan of raw food (no cooking required) and have come across, been given and adapted some amazing recipes.These featured on Good Morning late last year. What's more check out the ingredients and a whole lot of goodness in there.

Brain Balls by Dr Libby Weaver

Ingredients:

  • 2 cups walnuts

  • 1 cup sunflower seeds

  • 1 cup shredded coconut

  • 2/3 high quality cocoa powder

  • 8 fresh dates pitted (coarsely chopped) or 10-12 dried dates (coarsely chopped)

  • ¼ cup water

  • Pinch high quality organic natural sea salt

  • 1-3 drops of peppermint oil OR pure vanilla essence

Method

  1. Combine walnuts, seeds, dates and coconut in a food processor. Pulse for around 30 pulses to grind ingredients.
  2. Add cocoa powder, salt, water and peppermint oil to form a paste.
  3. Form into balls and chill for 30 minutes.

This chewy, nutty treat is an excellent source of the monounsaturated fats and omega-3 fatty acids that have the anti-inflammatory properties so necessary for healthy hearts and brain functions. Keep these easy to make snacks on hand for the perfect after school snack for a burst of energy or as a source of vitamin E and zinc, beneficial for skin and the immune system.
